Happy Winter! With the constant rain that has been falling in southern California over the last week, it certainly feels like winter has arrived. Even though we won’t be experiencing any snow days, we will be treated to an extraordinary view of snow-capped mountains once the rain clouds and fog lift.
And after all, a rainy winter day is not much different from a snow day. Once the excitement of stomping in puddles or making snow angels wears off and the cold and damp air settles into your bones, it’s time to head inside and enjoy a warm cup of cocoa and a slice of chocolate fudge cake.

You know those super motivated people who churn out hundreds (thousands, even) of cookies and batch after batch of holiday candy? I don’t know how they do it. In my world, the days fly by so quickly that I’m lucky if I can cook dinner from scratch, never mind an entire bakery case full of goodies. I love my readers. Truly I do. I am grateful for each and every one of you who stops to read my recipes and look at my photos. I strive to bring you the very best recipes, and to make them simple enough for anyone to make. I don’t like to post a recipe here unless it’s been tested and approved by The Boyfriend and I (tough job, but someone has to do it!).
I think it’s important to post recipes that could use a little work as well. I certainly have learned from others’ mistakes in the past. And with an entire community of food bloggers out there, collaboration will only make a recipe better! So I’d like to tell you about these pumpkin twinkies.

Whew. Things are finally back to normal around here. I wasn’t too keen on participating in Project Food Blog at first, but as I read the list of challenges I was inspired. The creative part of my brain took over and I began to imagine how I could take each challenge and create something new and unique. With the support of each of you who voted for me, I was able to present five different challenges. It was a whirlwind five weeks. It was stressful at times, but somehow each challenge got completed on schedule.
It was a joy to peruse the new entries every Monday and discover new blogs. Every single contestant has their own special flair and it has been such a treat to sift through the entries each week. I’d like to take the time to share some of my favorite new blogs along with a few that I’ve been reading for a while now.

All next week, I’ll be playing in the mud. I’m super excited to be attending my first cob building workshop! Cob is a building material made from clay, sand, and straw. It can be used to sculpt beautiful homes that are energy efficient and non-toxic. I’ve had my eye on cob workshops for years, visited as many naturally built structures as I could find, and now I have the opportunity to actually work on one! I’m celebrating with cupcakes.

The July 2010 Daring Bakers’ challenge was hosted by Sunita of Sunita’s world – life and food. Sunita challenged everyone to make an ice-cream filled Swiss roll that’s then used to make a bombe with hot fudge. Her recipe is based on an ice cream cake recipe from Taste of Home.

‘Tis the time of year to turn on the fan, sprawl on the couch (or on the patio if it’s not 100 degrees out) with a good book, and enjoy a bowl of ice cream. This Swiss Roll ice cream cake is like an all-in-one ice cream sundae with two different ice cream flavors, hot fudge, chocolate cake, and strawberry whipped cream! It’s sure to cool you down on a hot July day.

The June 2010 Daring Bakers’ challenge was hosted by Dawn of Doable and Delicious. Dawn challenged the Daring Bakers’ to make Chocolate Pavlovas and Chocolate Mascarpone Mousse. The challenge recipe is based on a recipe from the book Chocolate Epiphany by Francois Payard
I won’t ever forget the day that I made these pavlovas. I got laid off from my job, and they were there to greet me when I got home. Chocolate certainly has a soothing quality, and this double chocolate dessert (with cream on top) definitely eased my pain. The meringue cookies are soft and chocolatey inside, the chocolate mousse is bittersweet, and the crème anglaise adds the perfect touch of sweetness.
I’ll be taking a hiatus from blogging for a few weeks. When I return, I will most likely have a lot more time to spend baking and visiting everyone’s lovely blogs! So I leave you with this doozy of a dessert for chocolate lovers.
