Coconut Cupcakes with Chocolate Buttercream

All next week, I’ll be playing in the mud. I’m super excited to be attending my first cob building workshop! Cob is a building material made from clay, sand, and straw. It can be used to sculpt beautiful homes that are energy efficient and non-toxic. I’ve had my eye on cob workshops for years, visited as many naturally built structures as I could find, and now I have the opportunity to actually work on one! I’m celebrating with cupcakes.

Daring Bakers Challenge: O Canada! How I Love Nanaimo Bars!

The January 2010 Daring Bakers’ challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 Cookbooks and www.nanaimo.ca.

Check this out: I made gluten-free Nanaimo bars!  This was my first attempt at gluten-free baking, and I’m very pleased with the results.  So pleased that I ate the whole batch (with a little help, of course).
